Ingredients

Serves : 4
  • 2 cups Split green gram or sabut moong


  • 1 tbsp Oil or ghee


  • 1 tsp salt


  • 1 tbsp red chilli flakes


  • 1 onion finely chopped


  • 7-8 curry leaves


  • 1 tsp black mustard seeds


  • 1 tbsp chaat masala


  • 1 tbsp lemon juice

Directions

  • Soak the lentils overnight for best results. Leave them wrapped in a wet cloth for sprouting. It took me just 2 days to sprout so beautifully.
  • In a pan,heat oil and add mustard seeds to crackle. Next add curry leaves and chopped onions.
  • Also add red chilli flakes and salt. Saute until onion turns light pinkish and the raw smell vanishes. Now add the sprouts.
  • Stir fry this on a medium high heat and cover with a lid. Let them cook just for about 10-12 minutes until the raw smell disappears with an enticing aroma filling up your kitchen.
  • Squeeze some lemon juice and sprinkle chaat masala according to taste and one's choice. Place 3 tablespoons of this stir fried sprouts in the rotis or chapatis and fold thus giving rise to the most healthier options to enjoy at breakfast or brunch.
  • Sprouts are the most healthy source of protiens as well as the treasure houses of many an essential nutrients. The entire process of sprouting increases the nutrient levels and apart from folate,manganese,potassium etc,makes them rich in protien,thiamin,niacin,copper,iron,Vit.C and K etc. The list is endless and makes for an ideal food for the growing children as well as adults. The benefits are many and the use of these in wraps make them look even more lovely and a best accompaniment to school or office.
