Hi all, today I am going to make a Simple Beetroot Stir fry .It is a very healthy recipe. Beetroot is great for boosting stamina and making muscles work harder, it also contains potassium, magnesium and iron as well as vitamins A, B6 and C, and folic acid.

Ingredients
Serves : 2
Finely chopped beetroot - 1 big sized
Chopped Onion - 1 small sized
Curry leaves - 2 spring
Coconut oil - 1 tablespoon
Grated coconut - 3 to 4 tablespoon
Mustard seeds - 1 teaspoon
Red chilli powder - 1/2 teaspoon
turmeric powder - 1/4 teaspoon
Salt as per taste ( 1 - 1 1/2 teaspoon
Directions
Heat a pan ,add the coconut oil and splutter the mustard seeds in a low flame.Then add the chopped
onion and some curry leaves and stir it for 2 minutes.Add 1/2 teaspoon of red chilli powder,1/4 teaspoon of
turmeric powder and 1/2 teaspoon of salt into it.Roast it till the raw smell goes out.Then add the finely
chopped beetroot and mix well.Also add 3 to 4 tablespoon of grated coconut into it and mix all well for
1 to 2 minutes.Add 1/2 Cup of water and stir it.Close it with a lid and cook it in a low to medium flame
for 5 minutes.Open it in between and give it a mix.Then again close it and cook till it done.Check the salt
and add if needed. Add some grated coconut over it for a flavour,and mix it.You can also add some coconut
oil over it for more taste.Our tasty and simple beetroot stirfry is ready to serve.
