First soak the rice for 20 mins.and after that pressure cook the rice by adding 2.5 cups water, salt, and oil for 2 whistles..when the steam cools down then transfer it in a big bowl..let it cool down.cover it so that it may not get dry.
In the mean while when the rice is cooking lets make the paste..Peel the mangoes and chopp them.put ithem in the jar by adding red chilli deseeded, 1 tspn sesame seeds, 2tspn peanuts, 1/2 cup grated coconut and 1tspn jaggery..
If u dont want to add jaggery its optional..it is added to balance the sourness of the mangoes.now grind it and make semi fine paste.
Now we will proceed ahead by taking a pan..Heat it by adding 3 tblsp oil and 43 to 4 tblspn peanuts..saute it on low flame so that it does not get burnt..then add 1tspn mustard seeds..when it starts spluttering add chana dal and urad dal..saute it till it gets brown..now add curry leaves, red chilli dry, hing, and haldi powder..saute it by stirring continusly..Now add the Mango Coconut paste stirr it while mixing for 3 to 4 mins.the add salt mix it..now off the flame...
Now we have to mix the cooked rice to it..mix the rice very well with the hands.or make it sure if u are mixing them with the laddle that they are combined to each other...now its ready to eat...Serve this Mango Rice with fried papads or chips...or u can have it with curd .
