Rice soaked in water : 1cup
Sugar. :1/2 cup
Almonds : 1/3 cup
Cashews : 1/3 cup
Gulkand : 1/2 tablespoon
Green cardamom : 2
Cinnamon. : 1 inch stick
4 strings of saffron dissolved in milk : 1/4 cup
Milk : 1/2 cup
Ghee : 2 tablespoon
Water : 1 1/2 cup
Rose essence : 1 teaspoon
Edible rose petals : 1tablespoon
First take ghee in pan. Roast dry fruits, crushed cardamoms and cinnamon stick on low flame . Now keep half quantity of roasted dry fruits aside for garnishing.
Now add soaked rice in pan and saute for 2 minutes.
Add water. Let rice half cooked and add saffron milk.
When water disappears add milk , gulkand and sugar. keep stirring for a minute.
Now Cover it for 2 minutes and cook.
When milk dries add rose essence.
Lightly toss the rice.
Switch off the flame .Let it covered for 5 minutes.
Garnish with dry fruits and rose petals.
Yummy Jurda pulao is ready to relish. Serve hot.
