Ingredients

Serves : 4
  • Rice soaked in water : 1cup


  • Sugar. :1/2 cup


  • Almonds : 1/3 cup


  • Cashews : 1/3 cup


  • Gulkand : 1/2 tablespoon


  • Green cardamom : 2


  • Cinnamon. : 1 inch stick


  • 4 strings of saffron dissolved in milk : 1/4 cup


  • Milk : 1/2 cup


  • Ghee : 2 tablespoon


  • Water : 1 1/2 cup


  • Rose essence : 1 teaspoon


  • Edible rose petals : 1tablespoon

Directions

  • First take ghee in pan. Roast dry fruits, crushed cardamoms and cinnamon stick on low flame . Now keep half quantity of roasted dry fruits aside for garnishing.
  • Now add soaked rice in pan and saute for 2 minutes.
  • Add water. Let rice half cooked and add saffron milk.
  • When water disappears add milk , gulkand and sugar. keep stirring for a minute.
  • Now Cover it for 2 minutes and cook.
  • When milk dries add rose essence.
  • Lightly toss the rice.
  • Switch off the flame .Let it covered for 5 minutes.
  • Garnish with dry fruits and rose petals.
  • Yummy Jurda pulao is ready to relish. Serve hot.
