Heat 1 teaspoon oil. Roast 2 tbsp peanuts, chana dal, urad dal and cumin seeds with sesame Seeds and dry red chilli until aromatic
Add coconut and roast for a minute
Allow to cool completely and grind to fine powder
Heat 2 teaspoon oil in a pan and splutter mustard seeds
Add peanuts and curry leaves. Roast until peanuts are crunchy
Add salt and ground masala. Mux well
Add cooked rice and gently mix
Cover and Simmer for 2-3 minutes
Serve hot with raita
