Ingredients

Serves : 3
  • 11/2 cups basmati rice


  • 2 tbsp ghee


  • 250g mutton minced


  • 4-5 cardamom


  • 1 black stone flower


  • 1 inch cinnamon stick


  • 1 bay leaf


  • 1 tbsp ginger garlic paste


  • 1 diced onion


  • 1.5 tomatoes finely chopped


  • 1/2 teaspoon cumin powder


  • 1/2 teaspoon garam masala


  • 1 teaspoon biryani masala


  • 1 green chillies crushed


  • 3-4 cloves


  • 1/4 teaspoon pepper


  • 1/2 teaspoon turmeric


  • 1/2 tbsp chilli powder


  • 2 teaspoon salt


  • 1 teaspoon coriander powder


  • 21/2 cups water


  • Few saffron strands soaked in 4 tbsp milk


  • 1/4 cup chopped coriander leaves


  • 2 tbsp chopped mint leaves


  • 3/4 cup fried onions


  • 5-6 fried cashews

Directions

  • Clean and soak rice in water for 30 minutes. Desin excess water
  • In a handi , melt ghee, add bay leaf, cinnamon, cloves, stone flower. Saute for few seconds
  • Add onion and ginger garlic paste. Saute until onions are tender
  • Add minced meat and saute until meat changes colour
  • Add spice powders and 1 teaspoon salt. Mix well
  • Add tomatoes and cook until tomatoes are tender. switch off
  • Now add rice evenly on top. Sprinkle saffron milk and rest for 2 minutes
  • Add fried onions, cashews, mint leaves and coriander leaves
  • Now without disrupting the layer, add water and salt
  • Cover with a foil and lid. Cook over low heat for 18-20 minutes
  • Rest for 15 minutes. Gently mix. Serve with raita and salan
