Katoris: ....Bind to stiff dough, cover with damp cloth for 20 mins.. Roll into thin roti n cut rounds, n place on greased tart moulds, and poke with fork all over so it does not puff up.. when u hav 5 of them, put along with mould as it in hot oil mould wil come off the katoris, remove moulds with skimmer, deep fry katoris till nice golden brown color, remove on strainer n continue till all done... Namkeen Sev: ....Bind to sticky dough n use sev machine to mek sev.... deep fry.... NB: i added red color for this purpose Paani/Ras/Tamarind Sauce: ....blend ol very little water to get thick chutney then keep in fridge to chill... Green Chutney: ....blend all well with very lil water to a paste... Keep in a bowl Red Chutney: ...blend all well and keep in a bowl How to make Katori Aloo Chaat: 1) In each katori put aloo n chana 2) Scoop 1 tbsp tamarind sauce and hot chutney n dahi if using sprinkle chilli powder 3) Then put corriander leaves, green chillies n sev 4) Serve as u make katoris
