Ingredients

Serves : 4
  • 11/4 cup mango Ice-cream at room temperature


  • 3/4 cup flour


  • 1 teaspoon baking powder


  • 1 pinch salt


  • 4 tbsp powdered sugar adjust


  • 3 tbsp or more chopped mangoes


  • 2 tbsp rainbow sprinkles optional

Directions

  • Mango Ice-cream should be melted normally. It should be at room temperature
  • Preheat oven to 180 and line muffin tin
  • Sieve baking powder, flour and salt. Keep it aside
  • In seperate bowl, add Ice-cream, sprinklers and sugar. Mix well
  • Add dry ingredients. Cut and fold gently until well combined. It will be sticky batter
  • Fill muffins upto 2/3 level and bake for 18-20 minutes until done. Toothpick inserted into the centre should come out clean
  • Allow to cool for 30 minutes. Garnish with fresh mangoes / whipped cream and serve
