Ingredients

Serves : 8
  • 1.5 cups whole wheat flour


  • 1 cups date palm/any jaggery


  • 3 tbsp milk for dissolving jaggery


  • 1 cups milk for batter


  • 1 tbsp vinegar


  • 1 tsp vanilla essence


  • 3/4 cups olive oil


  • 2 nos eggs


  • 1 tsp baking powder


  • 1/2 tsp baking soda


  • 1/2 cups mixed dry fruits powdered (optional)

Directions

  • Microwave jaggery using 3 tablespoon milk or heating it in a pan. let cool
  • Combine milk and vinegar in a bowl and keep aside
  • In another bowl, beat the egg and oil together.
  • Pour in the milk- vinegar, vanilla Essence and jaggery paste. whisk well
  • Seive in the flour, baking soda, baking powder & dry fruits
  • Combine well to form a thick batter and pour it in a greased baking tin/bread loaf pan
  • Bake for 30 minutes at 180 degree celcius or till done
  • Let cool and store refrigerated and airtight
  • Consume within a week to enjoy the freshness of the cake
