Ingredients

Serves 8

  • Whole Wheat Flour 1.5 cups

  • Date palm/any jaggery 1 cups

  • milk for dissolving jaggery 3 tbsp

  • milk for batter 1 cups

  • vinegar 1 tbsp

  • vanilla essence 1 tsp

  • olive oil 3/4 cups

  • eggs 2 nos

  • baking powder 1 tsp

  • baking soda 1/2 tsp

  • mixed dry fruits powdered (optional) 1/2 cups

Directions

    Microwave jaggery using 3 tablespoon milk or heating it in a pan. let cool

  • 02

    Combine milk and vinegar in a bowl and keep aside

  • 03

    In another bowl, beat the egg and oil together.

  • 04

    Pour in the milk- vinegar, vanilla Essence and jaggery paste. whisk well

  • 05

    Seive in the flour, baking soda, baking powder & dry fruits

  • 06

    Combine well to form a thick batter and pour it in a greased baking tin/bread loaf pan

  • 07

    Bake for 30 minutes at 180 degree celcius or till done

  • 08

    Let cool and store refrigerated and airtight

  • 09

    Consume within a week to enjoy the freshness of the cake
