Ingredients

Serves 4

  • 150 grams all purpose flour

  • 1.5 teaspoon baking powder

  • 1 teaspoon salt

  • 1/2 cup water

  • 2 tablespoon oil

  • 100 grams grated carrots

  • 100 grams spring onion whites chopped fine

  • 100 grams boiled sweet corn kernels

  • 150 grams shredded boiled chicken breast pieces

  • 1 tablespoon crushed black pepper

  • 1 Tablespoon oregano powder

  • 4-5 garlic pearls chopped finely

  • 100 grams spinach leaves chopped

  • 50 grams black olives sliced

  • 150 grams shredded mozzarella cheese

  • 1/2 cup ketchup to serve

Directions

    Combine flour,salt to taste and baking powder on a bowl and add just enough water to knead a stiff dough

  • 02

    Rest the dough covered for 15 minutes

    Meanwhile sauté spring onion whites, garlic and carrots using 2 tablespoon oil for 5-7 minutes on medium-Low heat

    Thrown in the sweet corn kernels and chicken and sauté for another 5 minutes

    Add pepper crushed,salt,oregano to the mix and saute

    Finally add the spinach leaves and sauté till the spinach wilts

    Keep aside 4-5 tablespoon of cheese and add the rest of the cheese and olives to the mix

    mix well and take off heat

    make lemon sized dough balls post resting period

    roll into small disc big enough to cover a muffin cup

    Grease the muffin cups and place the rolled disc into each cup and press gently

  • 12

    Fill up each cup with the mix prepared leaving half an inch gap on the TOP

    Add the rest of the grated cheese on each

  • 14

    Bake for 15-20 minutes at 220degree celcius

  • 15

    Serve warm with ketchup or any dips of your choice
