Ingredients
Serves 6
200 grams of Japanese sweet rice/any short grain rice cooked until soft
150 grams sugar
200 grams thick coconut milk/creme
1 tablespoon salt
1.5 cups water
Mixed Fruits : 1/2 ripe mango
6 strawberries
1 slice pineapple (10 grams)
4 blueberries
1 Kiwi fruit
4 pieces dried cranberries
1/2 tablespoon toasted black sesame seeds
Directions
Mash the cooked 200 grams short grain rice with a spoon and keep aside
Combine 200 mili litre coconut creme, 100 grams sugar,1 tablespoon salt and mix till sugar dissolves in a pan
After done pour the liquid to the rice and let cool
Chop half a mango in strips, 4 strawberries,kiwis lengthwise & in circles. Chop other fruits small
For rolling sushis place a cling wrap. Place the bamboo mat and another cling wrap on the mat
Arrange half the rice in rectangular form and arrange the chopped strawberries and kiwis cut length
Roll the bamboo sheet tightly once along with the cling wrap and press for a minute
Place the sliced mango pieces on half the folded rice bar
Fold the bamboo sheet once again tightly so that the mango slices stick on to the rice
With the cling wrap on cut into one inch cylindrical pieces using a wet knife
Make egg shaped balls & a few with toasted sesame with the remaining rice and garnish with fruits
