  • Fresh malai....1/2cup


  • Curd...1/2cup


  • Red chilli powder...1tspn


  • Turmeric powder...1tspn


  • Cumin powder...1tspn


  • Asafoetodia...1/2tspn


  • Sugar...1/4teaspn


  • Salt...1teaspn


  • Ghee...1/2cup


  • Mint leaves...1cup


  • Keora water...1teaspn


  • Rose water...2drop


  • Mettha aatar...2drop


  • Cashew nuts...1/2cup


  • Birista or fried onion...1bowl


  • Saffron milk...3tspn

Directions

  • Soak the rice in water for 30 mins.
  • After that boil the rice.If rice is 2 cup then boil it with 4 cup of water.Just half boil it.After that cover it & keep aside.
  • Heat ghee, fry chopped onion & garlic paste for few minutes.
  • Add all spices & vegetables.Mix it well & cook it for 10 to 15 minutes.
  • Make a paste of malai & curd & mix it to veg gravy.Add salt & sugar.Fry cashew nuts also.
  • Deep fry some chopped onion to make birista.
  • Now take a clay pot & start assembling to make dum biryani.Firstly brush ghee in the lower portion of the clay pot.
  • Put one layer of half cooked rice first.Spread some ghee, mint leaves & saffron milk.
  • Now make layer of cooked veg gravy.Spread ghee & birista over it.
  • Repeat the rice layer over it.Finally spread ghee,mint leaves, birista, cashew nuts, keora water, mettha aatar,rose water & extra star anise to make aroma.
  • Cover the pot tightly with foil paper.
  • Heat water in a vessel.Place the clay pot on it & cook it in medium flame for 20 minutes.
  • After that switch off the flame & keep rest for 10 more minutes.
  • Serve it with any of your favourite raita.
