: in a saucepan heat oil . saute garlic for few minutes. add the onions & capsicum. cook for few minutes. add corn, pizza sauce, tomato sauce, salt, pepper & mixed herbs seasoning. cook for few minutes. remove from heat. keep aside & let the mixture cool.
for pink sauce: in a mixing bowl add 2 cups ofwaterto the grated beetroot. let it stay for few minutes .
strain the beetroot mixture in a colander & reserve the pink beetroot water in a bowl. (leftover strained/g rated beetroot can be used in sandwiches or salad)
in a saucepan heat butter. add flour & stir until the butter and flourare well combined. pour in milk, stirring constantly as it thickens. Add salt & pepper. add the pink beetroot water & mix well . cook until mixture is thick. remove from heat . fill it up in a piping bag (already fitted with a star nozzle)
final assemble : place the canape shells in a serving plate. add a spoonful of cooked corn mixture .
sprinkle grated cheese & frost with pink beetroot sauce. garnish with sprigs of coriander & serve
