Ingredients

Serves : 6
  • 1 cup whole wheat flour


  • 1/4 Cup Maize flour


  • 1/4 Cup oats


  • 1/2 cup ragi flour


  • 1/4 Cup shredded or grated Mozzarella/Cheddar cheese


  • 1/4 cup pizza sauce


  • 1 tbsp instant yeast 1 teaspoon salt or to taste


  • 3/4 cup lukewarm water or as required for kneading


  • 2 tbsp extra virgin olive oil


  • 1/2 capsicum chopped


  • 1/4 cup chopped cherry tomatoes


  • 4 tbsp chopped olives


  • 1/2 bell pepper chopped


  • 1/2 tbsp parsley


  • 1/4 teaspoon pepper


  • 1/2 tbsp oregano


  • 1 tbsp red chilli flakes

Directions

  • Mix flour and oats in a bowl
  • Make 3 wells. Add sugar yeast and salt respectively. Gently mix. add lukewarm water as required
  • Knead a smooth dough. Coat with 1 tbsp oil
  • Cover and rest for 2 hours
  • Gently deflate dough and knead for 5 minutes
  • Preheat oven to 180 and line baking tray
  • Make equal portions of dough. Roll into mini pizzas. place on baking tray and prick with fork all over
  • Bake for 10-12 minutes
  • In a bowl, add veggies and olives with salt, pepper and 1 tbsp oil. Toss well. You can always add topping of your choice
  • Apply pizza sauce evenly over baked pizzas. Place toppings on pizza
  • Add cheese over pizzas. Bake for 10-12 minutes in preheated oven at 180 deg until cheese melts
  • Sprinkle oregano, parsley and red chilli flakes. Serve
