Ingredients

Serves : 4
  • 6 potatoes (4 potatoes equal size, oval shaped for baking, 2 for bhaji)


  • 1 cup chopped capsicum


  • 1/2 cup chopped carrot


  • 1 cup chopped cauliflower


  • 1 cup green peas


  • 2 cups chopped tomatoes


  • 4 tbsp pav bhaji masala


  • 2 big onion chopped


  • 3 tbsp lemom Juice


  • 2 tbsp oil or as required


  • 4 tbsp butter


  • 1 tbsp grated mozzarella cheese


  • 2 tbsp Coriander leaves


  • 1 tsp chat masala


  • 2 tsp salt or as required

Directions

  • Wash 4 potatoes, scrub them and prick all over with fork
  • Apply some salt and oil and bake them for 35 minutes at 170 degrees, when cool scoop out pulp from the center and keep aside in 2 parts.
  • To prepare bhaji boil remaining 2 potatoes peel n cut or mash
  • In a pressure cooker put all the vegitables, (except capsicum) salt, one tsp pav bhaji masala and half cup of water and pressure cook until 3 whistle
  • In a pan heat up oil and one tbsp butter, add 1 chopped onion fry until pinkish
  • Add chopped capsicum fry for few minutes. Add chopped tomatoes. Fry until mushy. Add boiled vegitables with remaining liquids in the cooker, boiled potatoes, one part of scooped out pulp from baked potatoes. use a masher and mash it really well
  • Add salt, 2 tbsp pav bhaji masala, cover n cook for few minutes
  • Add butter and lemon juice and adjust the seasoning
  • Keep on adding boiling water little by little and continue cooking till you get a smooth bhaji
  • Take the baked potatoes and cut them from center lengthwise
  • Brush the inside part with some melted butter, fill half of the baked potato halves with prepared bhaji.
  • Put One remaining part of the scooped out potato pulp in a bowl, add lemon juice, chat masala and salt fill this mixture in remaining baked potato halves
  • Arrange them in a baking tray, you have four bhaji filled and 4 potato mixture filled baked potatoes halves.
  • Add little butter and grated cheese on each and put it in the oven just for 5 minutes so that cheese melt
  • Sprinkle pav bhaji masala, lemon juice and coriander leaves, serve immediately with few lemon wedges and chopped onion
  • You will fall in love with this twisted version of hot hot baked potato pav bhaji on a rainy day
