Ingredients

Serves : 4
  • 1/3 cup Toor dal


  • 1 lemon sized tamarind ball


  • 2 cups cubed veggies ( white pumpkin, yellow cucumber, brinjal, carrots, lady's fingers etc)


  • 4-5 drumsticks cut lengthwise


  • 1 chopped tomato


  • 1 slit green chillies optional


  • 3/4 teaspoon turmeric


  • 1 teaspoon salt or as per taste


  • 3 tbsp chopped coriander leaves


  • For Masala: 1/3 cup grated coconut


  • 2 teaspoon urad dal


  • 2 tbsp coconut oil


  • 4-5 dry red chilli


  • 1/4 teaspoon fenugreek seeds


  • 3 tbsp coriander seeds


  • 1 tbsp chana dal


  • 4 shallots or half onion chopped


  • 2 sprig curry leaves


  • For Seasoning: 2 tbsp coconut oil


  • 1/4 teaspoon hing


  • 1 sprig curry leaves


  • 2 dry red chilli


  • 1 teaspoon mustard seeds

Directions

  • Soak tamarind in warm water for 45 minutes
  • extract the tamarind Pulp and discard the waste
  • pressure cook The Dal, 1/2 TSP turmeric and water until Done. mash dal and keep it aside
  • Masala preparation::heat oil in a pan add dals and fenugreek seeds. saute until golden brown
  • add coriander seeds dry red chilli shallots and curry leaves ,mix well
  • Add grated coconut and saute until Brown
  • allow the mixture to cool completely. grind with water to form smooth paste
  • pressure cook all the vegetables for one whistle with little water and 1/4 teaspoon turmeric
  • Add cooked Dal, tamarind pulp , ground paste , tomatoes salt and ladies finger to cooked vegetables
  • bring to boil, simmer and cook for 15-20 minutes
  • Heat oil in a small pan, add hing and splutter mustard seeds
  • Add dry red chilli and curry leaves. Saute for few seconds
  • Add seasoning and coriander leaves to sambar and mix well
  • Serve hot
