Ingredients

250 gram spinach leaves
2 potatoes:boiled, peeled and mashed
150 grams paneer
150 grams bread crumbs+ 100 gram extra
100 grams chopped coriander leaves
2 tablespoon salt
1.5 tablespoon red chilli powder
1 teaspoon turmeric powder
1 teaspoon amchur powder
60 mili litres of oil
100 gram green peas
50 grams French beans chopped
1 small capsicum chopped
2 tablespoon corn flour
2 green chillies finely chopped
10 cashews
water 2 cups
Directions
heat the water in a pot and blanch the spinach leaves until they soften
discard the water post blanching
heat 2 tablespoon oil and sauté green chillies, capsicum, beans and peas until they soften slightly
purée the spinach and veggies together
place the puréed veggies in a bowl
add paneer, potatoes, coriander leaves, corn flour and 150 gram bread crumbs to it
follow it up by adding dry spices and salt
mix well together to infuse the flavours in the dough
make medium sized patties of the dough
heat oil for deep frying and layer the remaining bread crumbs on a plate
coat every patty with the bread crumbs and deep fry in batches until slightly brown and crisp
rest the fried patties on an absorbent paper for sometime
