  • Refined Flour -2 cups

  • Ghee-6-8 tbsp

  • Milk-3 tbsp

  • Sugar-1 tbsp

  • Salt to taste

    Take refined flour and salt in a mixing bowl, add 1 tbsp of ghee into it. Mix it by rubbing ghee into the flour by your fingertips. Warm the milk in a pan,dissolve the sugar into it. Pour this mixture into the flour and mix thoroughly. Add enough water and knead it lightly to make a soft dough and let it rest for 1/2 an hour.

    After 1/2 an hour, divide the dough into equal portions and shape it into balls. Roll out each ball into a very thin round roti. Brush the entire surface of each roti with 1 tbsp of melted ghee and dust with flour.

    Pleat the roti to make a number of folds(fan fold) .Roll up into a spiral. Press it between your palms and keep it aside for 5 minutes. After 5 minutes, roll it out lightly into a paratha. The paratha should be not very thin nor very thick.

    Heat a tawa, place paratha on the tawa, cook it from both sides on medium heat. Pour little ghee all around and shallow-fry the paratha till both sides are little golden brown. Lightly crush the paratha with your hands to separate the layers and serve it immediately.
