Ingredients

Serves : 4
  • 1 cup maida additional for dusting


  • 1/2 cup wheat flour


  • 1/4 TSP baking soda (optional)


  • 1/2 cup warm milk


  • 3 tbsp water or as req


  • 1/2 TSP salt


  • 3/4 TSP sugar


  • 1.5 tbsp ghee


  • 1/4 cup oil

Directions

  • in a bowl mix flours, salt sugar baking soda and ghee
  • Add milk and little water. Knead for 10-15 minutes to form smooth dough
  • Cover and rest for 30 minutes
  • Dust surface with flour and divide dough into equal portions
  • Roll into thin roti. Sprinkle oil and flour on top of roti
  • Create pleats by folding with help of fingers. Stretch the pleated dough as much possible. Second method is cut the roti into strips and place strips one over the other
  • Roll pleated dough or strips like swiss roll and gently secure the ends
  • Now roll it into roti
  • Place paratha over hot tawa. Cook on both sides
  • Drizzle oil or ghee on top of paratha. Serve hot with spicy gravy
