Ingredients

Serves : 3
  • 1/2 tsp cumin


  • 1/2 tsp cinnamon


  • 2 tbsp orange juice


  • 1 1/2 tsp red wine vinegar


  • 2 tbsp molé paste


  • 5 tbsp chilli oil


  • 3 cups cooked quinoa


  • 20 gms chopped cilantro fresh


  • 1 pinch salt – to taste


  • 2 nos green onions (thinly sliced)


  • 1 cups black beans (boiled)


  • 7 nos cherry tomato (halved)


  • 1/2 cups iceburg lettuce

Directions

  • Combine first cumin, cinnamon, orange juice, red wine, salt, vinegar, Molé paste in a small bowl and slowly add chilli oil, whisking as you pour.
  • Combine quinoa, tomato, onions, black beans, and cilantro. Add vinaigrette mix toss to coat. Add lettuce & toss to combine.
