Ingredients

1/2 tsp cumin
1/2 tsp cinnamon
2 tbsp orange juice
1 1/2 tsp red wine vinegar
2 tbsp molé paste
5 tbsp chilli oil
3 cups cooked quinoa
20 gms chopped cilantro fresh
1 pinch salt – to taste
2 nos green onions (thinly sliced)
1 cups black beans (boiled)
7 nos cherry tomato (halved)
1/2 cups iceburg lettuce
Directions
Combine first cumin, cinnamon, orange juice, red wine, salt, vinegar, Molé paste in a small bowl and slowly add chilli oil, whisking as you pour.
Combine quinoa, tomato, onions, black beans, and cilantro. Add vinaigrette mix toss to coat. Add lettuce & toss to combine.
