Put the chicken in a large pot, cover with water and season with salt. Bring to a gentle simmer over low heat and add the Molé paste 3 tbsp, cook for about 30 minutes on a slow simmer.
Transfer the chicken to a large plate and set the cooking liquid aside. Toast the sesame seeds in a dry skillet over medium heat, tossing, until golden, about 5 minutes.
Heat the cooking liquid and stir, until thickened, 5 to 6 minutes. Drizzle the thickened sauce over the chicken. Garnish with the sesame seeds.
