Ingredients

Serves : 2
  • Urad dal 1 cup


  • Everest Sambhar masala 2 tablespoons


  • Chopped Ginger 1 teaspoon


  • Chopped green chilli 2


  • Salt 1 to 2 teaspoons as per test


  • Oil for deep frying 4 cups


  • Chopped onion 1 tablespoon


  • chopped carrot 1 tablespoon


  • Chopped drumsticks 2


  • Tamarind pulp 1 tablespoon


  • Chopped pumpkin 1 tablespoon


  • Cooked tuar Dal 2 cups


  • Curry leaves 10


  • Fenugreek seeds 1/4th teaspoon


  • Mustard seeds 1 teaspoon


  • Whole dry red chillies 2


  • Everest ka tikhalal red chilli powder 1/2 teaspoon


  • Turmeric powder 1/2 teaspoon

Directions

  • First of all wash urad dal 5 to 6 times with clean water
  • Soak washed urad dal in the water for 5 to 6 hours
  • Now after soaking 5 to 6 hours , remove extra water from soaked dal and grind it in mixer grinder into a smooth paste
  • Add salt according to taste, chopped ginger and chopped green chillies into urad dal paste and mix well, till fluffy
  • Heat sufficient oil in heavy bottom plan for deep frying medu vada
  • Wet your hands with some water, take sufficient amount of urad dal paste and prepare Vada on hand and make a whole in centre
  • Carefully drop Medu vada in hot oil
  • Likewise, prepare all the medu vada and deep fry on low heat, till golden brown and start floating on the surface
  • Remove all the deep fried Medu Vadas on paper napkin to absorb excess oil
  • For preparing flavourful Sambhar, heat 1 tablespoon of oil in a deep container, crackle mustard seeds and immediately and curry leaves , add fenugreek seeds and whole red chilly
  • Add on chopped veggies mix well and cook covered for sometime
  • Now add two tablespoons of Everest Sambar Powder, half teaspoon of Everest ka tikhalal red chilli powder, half teaspoon of turmeric powder and salt according to taste . Mix well and let it cook for some more time on medium heat
  • Now add cooked toovar dal and 4 to 5 cups of water, mix it properly and allow it to boil properly
  • Flavourful Everest Sambhar is ready to serve with medu Vada... serve hot immediately and enjoy
