First of all wash urad dal 5 to 6 times with clean water
Soak washed urad dal in the water for 5 to 6 hours
Now after soaking 5 to 6 hours , remove extra water from soaked dal and grind it in mixer grinder into a smooth paste
Add salt according to taste, chopped ginger and chopped green chillies into urad dal paste and mix well, till fluffy
Heat sufficient oil in heavy bottom plan for deep frying medu vada
Wet your hands with some water, take sufficient amount of urad dal paste and prepare Vada on hand and make a whole in centre
Carefully drop Medu vada in hot oil
Likewise, prepare all the medu vada and deep fry on low heat, till golden brown and start floating on the surface
Remove all the deep fried Medu Vadas on paper napkin to absorb excess oil
For preparing flavourful Sambhar, heat 1 tablespoon of oil in a deep container, crackle mustard seeds and immediately and curry leaves , add fenugreek seeds and whole red chilly
Add on chopped veggies mix well and cook covered for sometime
Now add two tablespoons of Everest Sambar Powder, half teaspoon of Everest ka tikhalal red chilli powder, half teaspoon of turmeric powder and salt according to taste . Mix well and let it cook for some more time on medium heat
Now add cooked toovar dal and 4 to 5 cups of water, mix it properly and allow it to boil properly
Flavourful Everest Sambhar is ready to serve with medu Vada... serve hot immediately and enjoy
