Ingredients

Serves : 4
  • 150 grams oyster mushrooms


  • For Dry Spices : 1 teaspoon coriander seeds


  • 1/2 TSP cumin seeds


  • 1/4 teaspoon fennel seeds


  • 1/4 teaspoon peppercorns


  • 3-4 dry red chilli


  • For Gravy :. 2 tbsp oil


  • 1 inch cinnamon stick


  • 1/2 teaspoon jeera


  • 1 onion finely chopped


  • 2tomatoes chopped


  • 7-8 cashews


  • 3/4 cup water


  • 1 TSP salt or as per taste


  • 2 tbsp cream


  • 1/2 teaspoon turmeric powder


  • 1/4 teaspoon Kashmiri red chilli powder


  • 2 tbsp chopped coriander leaves


  • 1 teaspoon crushed kasuri methi


  • 1 tbsp ginger garlic paste


  • 1/2 teaspoon garam masala

Directions

  • in a pan, dry roast all the dry spices until aromatic
  • grind the spices to the powder on cooling
  • soak cashew nuts in warm water for 30 minutes, drain excess water. grind cashews and tomatoes to form smooth paste
  • heat oil , add cinnamon and splutter jeera
  • add ginger garlic paste, onions with little salt saute until onions are translucent
  • add the ground Puree, saute until oil starts leaving the sides
  • add Spice powders and ground Spice , saute for a minute
  • Add oyster mushrooms and mix well. cover and cook for 3-4 minutes
  • add water and salt bring to boil. cover and simmer for 15 minutes until mushrooms are done
  • Add kasuri Methi coriander leaves and cream mix well and switch off
  • Serve hot with roti or naan
