in a pan, dry roast all the dry spices until aromatic
grind the spices to the powder on cooling
soak cashew nuts in warm water for 30 minutes, drain excess water. grind cashews and tomatoes to form smooth paste
heat oil , add cinnamon and splutter jeera
add ginger garlic paste, onions with little salt saute until onions are translucent
add the ground Puree, saute until oil starts leaving the sides
add Spice powders and ground Spice , saute for a minute
Add oyster mushrooms and mix well. cover and cook for 3-4 minutes
add water and salt bring to boil. cover and simmer for 15 minutes until mushrooms are done
Add kasuri Methi coriander leaves and cream mix well and switch off
Serve hot with roti or naan
