Ingredients

  • 250 gms Parwal


  • 4 medium Potatoes


  • 1 Onion chopped


  • 2 medium chopped tomatoes


  • 1 tbsp ginger-garlic paste


  • 4 tbsp Oil


  • 1/2 tsp Cumin seeds 1/2 tsp Turmeric powder 1 tsp Red chilli powder 1/2 tsp Cumin powder


  • 1/2 tsp Coriander powder


  • 1/2 tsp Sabji masala


  • 1 tsp salt or as par taste


  • 2 tbsp coriander leaves chopped

Directions

  • Heat a cooker and add oil. Let the oil heat add parwal and potato. Stir it.
  • Fry it for 3-4 minutes on medium flame. Cover the cooker.
  • Once it turns light golden take it out and keep aside.
  • Add little oil in the same cooker. Heat oil and add cumin seeds . Fry it for few seconds.
  • Add onions and fry it for 2-3 minutes on medium flame. Stir it and add ginger-garlic paste. Fry it for 1/2 minute. Stir it.
  • Add tomatoes and mix well and cook for 3-4minutes. Reduce the flame to low.
  • Add turmeric powder, red chilli powder, cumin powder, coriander powder, sabji masala and salt. Mix well.
  • Cook the masala for 1-2 minutes on low flame . Cover the cooker.
  • When oil separate from sides add fried vegetables and mix well. Cover the cooker and cook it for 3-4minutes.
  • Keep stirring in between and cook for 4-5 minutes. Stir it.
  • Off the flame. Parwal Aaloo Dry Sabji is ready .
  • Serve hot and garnish with chopped coriander leaves.
