Ingredients
Serves 2
Big brinjal 1
Finely chopped onions 2
finely chopped tomatoes 2
crushed garlic 1 teaspoon
Finely chopped Ginger 1 teaspoon
chopped green chillies 2
salt 1 teaspoon
Everest Garam Masala 1 teaspoon
Everest ka tikhalal masala 1/2 teaspoon
turmeric powder 1/2 teaspoon
Directions
first of all wash brinjal and prick it at 4-5 places ( with knife) on its surface
it helps in fast cooking
now apply some oil on brinjal and roast it on direct flame on gas
Before roasting, applying some oil on brinjal, helps in removing its peel easily
while roasting brinjal, keep turning in between and check with the help of knife ..if it's cooked or not
when it is completely Cooked, remove from heat, and let it cool for for sometime
remove it's burnt peels and mash the cooked the brinjal pulp
Heat some oil in a pan and add crushed garlic and finely chopped onion
Saute'till golden brown
now add turmeric powder, Everest ka tikhalal and Everest Garam Masala to the sauteed onion and garlic
Now add finely chopped tomatoes and saute' till soft and oil start separating
now add mashed brinjal pulp, Adjust salt according to taste and mix well
let it cool covered for some more time
lastly add some freshly Chopped coriander and serve hot immediately with soft phulkas or parathas
