Wash and dry okra with the help of kitchen towel. Now cut it in 2" - 3" pieces then slit each pieces in lengthwise.
Keep okra pieces in a big bowl. Sprinkle coriander, turmeric, chilly powder, salt and mixed up very well ; keep aside for 10 minutes.
By the time mix up all dry masala turmeric, chilly, cumin powder, salt, wheat flour in a bowl. Add little - little water and make lumps free medium thick liquid.
Now sift this liquid in a heavy bottom pan / kadai on low heat. Stir continuously while cooking for prevent burning and splitting up curd.
Cook this mixture for 10 minutes on low heat. Gradually mixture turns thicker.
In mean time, heat 1 tbsp oil in a thick bottom pan on medium heat. Add okra pieces in pan and shallow fry it. Shake pan several times so that okra will cook evenly.
Take fried okra pieces and drop it off in cooked curd mixture. Mix properly ; cover pan with lid and cook for 5- 7 minutes on low heat. Stir twice while cooking.
Add more water as your preference. Check salt adjust as needed. Switch off the gas stove.
Heat 1/2 tbsp oil in a small pan / kadai on medium heat. Add red chilly, mustard seeds, cumin seeds, curry leaves, chopped garlic and onion one by one. Fry till onion colour changed in pink colour.
Now add kashmiri chilly powder in it and mix it up. Switch off the gas stove.
Add this temper mixture in Dahi - Bhindi and mixed up very well. Sprinkle chopped coriander leaves and serve hot as main course vegetable.
