Deep fry all the vegetables and keep them aside.
Saute onion till pink and keep aside.
Make puree pf tomatoes and garlic.Cook it without using any oil till it gets dry.
In a blender,again blend tomato and onion paste with the help of water.
Saute the paste for 3-4mins whilst adding all the spices.
Set the fried veggies in a plate.Pour this gravy ONLY AT THE TIME OF SERVING otherwise veggies will get soggy.
Garnish with fresh coriander and cream.
Serve hot with roti or. parantha and some papad
