Ingredients

Serves : 6
  • 500 gm soaked overnight , boiled split black gram


  • 1/2 cup sesame seeds


  • 2 large onion chopped


  • 1 tablespoons ginger and garlic chopped


  • 1 teaspoon salt


  • 2 tablespoons lemon juice


  • 2 tablespoons chopped green chilli


  • 1/2 cup chopped coriander leaves


  • 1 teaspoon garam masala powder


  • 4 tablespoons oil


  • 5 no clove


  • 1" cinnamon


  • 5 black cardamom


  • 5 green cardamom


  • 1/2 teaspoon nutmeg powder


  • 1 teaspoon cumin seeds


  • 8 red chilli


  • 2 tablespoons peppercorns


  • 1/4 cup mint leaves


  • 125 gm finely chopped green mangoes


  • 1/4 teaspoon salt

Directions

  • Soak the black chana overnight .
  • Tie the cloves , bay leaves , cinnamon sticks , black cardamom , green cardamom , nutmeg powder , cumin seeds , dried red chilli and black peppercorns for the spice mix in a piece of muslin cloth or place in an infuser .
  • Then add the chopped garlic and ginger , a teaspoon of salt , chopped onion , and the bag and pressure cook for 2 whistles .
  • Remove the spices and grind them with a little of the cooking water to a fine paste .
  • Add the ground spice paste , chopped coriander , lemon juice , chilli powder and garam masala powder to the paste . Mix well and adjust seasoning .
  • Now , for the stuffing , chop onions , green chilli , chopped mangoes and mint and mix them all together . Then add the chopped ginger .
  • Shape the gram mixture into small patties on your palm .
  • Place a little stuffing in the centre and bring the edges of the patty together to enclose the stuffing .
  • Spread the sesame seeds in a plate .
  • Coat the Tikki into the sesame seeds .
  • Heat oil in a pan and put the patties on the pan and fry medium heat till nicely crisp on side .
  • Flip the patties over and cook the other side as well .
  • Serve them hot with Mustard Sauce along with Cranberry Delight ☺️
