Ingredients

Serves : 2
  • 1 large onion finely chopped


  • 1 tomato chopped


  • 1 bay leaf


  • 1 tsp ginger garlic paste


  • 1 tsp mustard seeds


  • 4 curry leaves


  • 1/2 tsp turmeric powder


  • 1 tsp red chilly powder


  • 1 tsp egg curry masala


  • 2 tsp coriander leaves


  • 1 tsp cumin powder


  • 3 eggs

Directions

  • Take oil in a pan and add bay leaf , mustard seeds.when it splutters add curry leaves, onions and some salt. wait till onion shrink in size
  • Now add ginger garlic paste and give it a stir. Next add tomato, turmeric powder ,let the oil seperate and tomato turn mushy.
  • Add red chilly powder , cumin powder , coriander leaves and egg curry masala.Mix it well.
  • Break eggs one by one and let it cook for some time.when its cooked add water and bring it to boil. finally garnish with coriander and serve hot.
