Ingredients

Serves : 4
  • Brinjal - 8pieces(small size)


  • Roasted peanut - 1cup


  • Turmeric powder - 1teaspoon


  • Red chilli powder - 1teaspoon


  • Cumin powder - 1teaspoon


  • Coriander powder - 1teaspoon


  • Black pepper powder - 1/4 teaspoon


  • Gram masala powder - 2 teaspoon


  • Salt - 2 teaspoon


  • Oil - 1cup


  • Cumin seeds - 1 teaspoon


  • Mustard seeds - 1 teaspoon


  • Onion - 2medium sized (roughly chopped)


  • Ginger - 2inch


  • Garlic - 10cloves


  • Green chilli - 1


  • Kashmiri Red chilli powder - 1teaspoon


  • Coriander leaves - 1/4cup (finely chopped)


  • Tomato puree - 1/2cup


  • Tamarind pulp - 2 teaspoon

Directions

  • Take a grinder then make fine powder of peanut.
  • Cut the brinjal in triangle so that we can fill it with peanut.
  • Take a bowl add peanut powder then add turmeric powder, red chilli powder, coriander powder, cumin powder, black pepper powder, salt, gram masala powder mix it well.
  • Fill the brinjal with this peanut mixture.
  • Take a pan add 1 tablespoon oil then sallow fry all the brinjal on medium flame for 5-7min.
  • Take a jar add onion, ginger, garlic, green chilli and make the fine paste of it without using water.
  • Take a pan add oil then add cumin seeds, mustard seeds saute then add kashmiri Red chilli saute then add onion paste fry for 2min.
  • Add tomato puree mix it well and fry it for 2min then add fried stuffed Brinjal and cook it on medium flame for 5min by covering the pan.
  • Add 1/2cup water then add gram masala powder, peanut powder and coriander leaves cook for 10min or till the gravy thick.
  • Turn off the flame and add tamarind pulp mix it well.
  • Brinjal stuffed masala is ready to serve.
