Ingredients

Serves : 4
  • 2 tbsp butter


  • 3 tomatoes finelychopped


  • 1/4 cup peas


  • 1 carrot finely chopped


  • 1/2 capsicum finely chopped


  • 1 onion finely chopped


  • 1 tbsp ginger garlic paste


  • 1 teaspoon salt


  • 11/4 tsp Kashmiri chilli powder


  • 3 tbsp chopped coriander leaves


  • 6-7 beans finely chopped


  • 2 potatoes boiled and cubed


  • 1/4 tsp turmeric


  • 2 tsp kasuri methi crushed


  • 1.5 tsp pav bhaji masala


  • 1 tbsp lemon juice


  • 1 tsp beetroot puree or 2-3 drops red food colouring (optional)


  • 1 cup water (adjust to consistency)


  • For Pav: 8 pav


  • 4 tbsp melted butter


  • 4 tsp chopped coriander leaves


  • 1/2 tsp pav bhaji masala


  • 1/2 TSP Kashmiri chilli powder

Directions

  • Melt 1 tbsp butter in a kadai, add chopped veggies and mix well
  • Add 1/2 cup water. Cover and cook until very soft
  • Mash the veggies coarsely
  • Add 1 tsp red chilli powder, turmeric, 1 tsp pav bhaji masala ,1 tsp kasuri methi, 2 tbsp coriander leaves . Saute for 2 minutes
  • Create space at the centre of kadai, add onions, ginger garlic paste, remaining chili powder, kasuri methi and pav bhaji masala with 1 tbsp butter
  • Add 1 tbsp coriander leaves and lemon juice. Mix well
  • Cook until onions are completely soft
  • Add beetroot puree or food color. This is optional step. This will add brightness to bhaji. Mix well
  • Add water as required to adjust the consistency
  • Boil and mash for 5 minutes until smooth in texture
  • In a bowl, add butter, red chilli powder, coriander leaves and pav bhaji masala. Mix well
  • Heat tawa, add little butter mix . Slit the pav at centre and fry the pav on tawa on both sides
  • Add dollop of butter on pav bhaji and serve hot with roasted pav and some chopped onions and lemon
