Ingredients

Serves 5

  • Govinda bhog short grain rice or kalijeera rice or Basmati - 500 gms

  • Chicken - 1 kg

  • Brown onion or beresta - 1 cup

  • Ginger garic paste - 1 tbso

  • Green chili paste - 2 tsp

  • Yoghurt - 1/2 cup

  • Turmeric powder - 1 tsp

  • Chili powder - 1 tsp

  • Coriander powder - 1 tsp

  • Cumin powder - 1/2 tsp

  • Biriyani masala - 2 tsp

  • Salt - 1 -2 tsp or as required

  • Saffron - 1/4 tsp

  • Milk - 1/2 cup

  • Kewra water - 1 tsp

  • Rose water - 2 tsp

  • Potato - 3 , cut into halved

  • Shahi jeera / black cumin seeds - 1/2 tsp

  • Dried prunes or alu bhokhra - 5 -6

    Washed rice properly then soak rice for 30 to 40 minutes. fry potatoes with salt and little turmeric for 4-5 minutes ..

    how marinate chicken with yogurt ,ginger garlic paste ,green chilli paste ,cumin , coriander , Chile and turmeric powder.. salt to taste , half teaspoon of sugar ,biryani masala and 1/2 cup brown onion.. For 1 hr . soak saffron in warm 1/2 cup milk for 20 minutes.

    now heat a pan with enough water for making rice... When water is start to boiling add 3-4 tbsp salt , 2 bay leaves , 3 to 4 green cardamom , 4 to 5 cloves, 1/2 tsp shahijeera and then add soaked rice and cook rice till half done

    then drain water from rice and keep rice on the colandar

    now assembling the Biryani layer --------------------------

    now take a heavy bottom Pan and then put marinated chicken and spread them into bottom of the pan thoroughly

    spread 1 /2 cup brown onion over the marinated chicken , then add fried potatoes and dried prunes

    now layer with the half of the Rice and then spread one teaspoon biryani masala and one teaspoon of ghee , 1 tsp kewra water and 2 tsp rose water .over the rice.

    Now layer with the last portion of the Rice and then spread one teaspoon biryani masala , one teaspoon of ghee and half cup of saffron soaked milk .

    now cover the pan with Aluminium foil tightly and then put the lid and cover the pan.. OR cover pan with lid and then seal the sides of the pan with atta dough.

    now cook Biryani first 1 minute on high flame then turn down flame on low fire and cook (Dum )Biryani for minimum 1 hour

    After 1 hr kachhi chicken Biriyani is ready to serve.
