Ingredients

  • For dough=2cup plain flour

  • 1tbsp oil

  • 1/2tsp salt(as needed)

  • water 1/2cup(as needed kneading)

  • for stuffing=3eggs

  • 1/2cup boiled patato(mashed)

  • 1tbsp chopped onion

  • 1tsp chopped green chilies

  • 1tsp chopped coriander leaves

  • 1tsp greated ginger

  • 1 tsp red chili powder

  • 1tsp garam masala

  • 1/2tsp salt (as needed)

Directions

    Frist make a dough,in a large bowl take 2cup plain flour,1tbsp oil,salt mix well.give a very well it resembles fine bread crumbs.this will ensure the flakiness of the paratha.then put warm water little by little abd knead it.we knead semi soft,strethy and pliable dough so that you can able to roll out thin.

    One you knead it well,smear little oil on the surface of the of the dough.cover with damp cloth for about 20 to 30 minutes.keep it aside.

    In a bowl,put chopped onions,chilies,coriander leaves,add greated ginger.add red chili powder,garam masala powder,add salt to taste.beat well and it ready for the filling.

    After resting the dough,knead it again.now take a ball size out of this dough.

    Roll with the help of some flour.keep rolling out as thin as possible but not paper thin,else it well not hold the stuffing well.

    Put the egg stuffing in the middle,spread little.now fold two oppiste sides towards center.similarly fold another two ends so that it completly closed the filling insid.makke sure filling has come out.gently slide the paratha.

    Cooked on low flame else inner egg filling will remain under cooked.

    Splash the oi gently from sides on the mughlai paratha.this way it well get enought oil to cook.

    Cooked until both sides turn to nice and golden.strain of the access oil.serve it with green chutny or sauce.
