1 For chicken
1/2 chicken breast and leg pieces
1 cup curd for chicken
1 tsp deggi mirch
1tsp garam masala powder
1 Pinch of Heeng
1 pinch Roasted cumin powder
1/2tsp salt and pepper to taste
1 Lemon juice
2 bay leaves
2-3 coal pieces
1tsp pure ghee
2 for roomali roti
2cup refined flour
1 pinch of salt
1/2 cup water or as required water
3-For shawrma dressing
1 cup heavy cream
1/2 pinch salt and pepper
In a bowl, mix curd, deggi mirch, garam masala besan, heeng, roasted cumin powder, salt and pepper, lemon juice, and add chicken and let it for 2hrs for merination.
after 2hrs, cook on tawa or grill and pour some oil in between to make chicken juicy. Cook until golden brown.
Burn charcoal(koyla) and place in middle of the wok and put all the cooked chicken on sides. Pour some desi ghee on the charcoal and put lid or cover the wok. It will smoke the chicken with the beautiful aroma of charcoal.
For making roti-
Mix all the ingredients and make a soft dough. 2) roll thin on the rolling plateform with rolling pin.
heat wok and let it upside down to have a round surface for roomali roti.
cook the rotis and set aside.
In a bowl, mix heavy cream, mayonaise lemon juice and salt to taste
add some chopped onions and corriander leaves.
fill and fold like a roll in roomali rotis and they are ready to serve.
