Soak mealmaker/soya chunks in hot water for 15 mins. Wash in cold water 2-3 times. Squeeze the excess water with hand. Chop into small pieces if using large chunks
Make a paste of coconut, cashews and fennel seeds
Chop the shallots,tomatoes and garlic pods
Slit the green chillies
In a heavy bottomed vessel heat oil and add mustard seeds followed by cinnamon,cloves and bay leaves
Then add the chopped shallots,garlic,crushed ginger and soya chunks.
Saute well and then add curry leaves and tomatoes
Add the red chilli powder, coriander powder,salt, turmeric powder and saute well
Cook covered for 5 minutes for the soya chunks to absorb the masala
Now add the ground paste and stir well
Add water for required consistency of gravy and allow it to boil for 5 minutes.
Garnish with coriander leaves and serve hot with steamed rice,dosa or rotis
