Ingredients

Serves : 4
  • Gram Flour -2 cup


  • Curd-1 cup


  • Ginger-garlic-green chilli paste -1tbsp


  • Cumin Seeds -1tbsp


  • Fenugreek seeds and Carom seeds -1/2 tbsp each


  • Asafoetida - 1 pinch


  • Dry Red Chilli -4


  • Red Chilli Powder -1tbsp


  • Turmeric -1tbsp


  • Curry Leaves -4-5


  • Baking Soda - 1 pinch


  • Cooking Oil


  • Salt as per taste

Directions

  • To make badi or pakoras, combine carom seeds, gram flour, red chilli powder, turmeric powder, salt and baking soda in a bowl. Mix well using sufficient water to make lump free pakora consistency batter.
  • Heat sufficient oil in a kadhai. Drop small portions of gram flour mixture into the hot oil and deep fry till golden. Drain on absorbent paper and set aside.
  • To make kadhi, combine curd, 4tbsp gram flour, ginger-garlic-green chilli paste, red chilli powder, turmeric powder and salt in a bowl. Add 500 ml water and whisk well.
  • Heat oil in a pan,add asafoetida, cumin seeds, fenugreek seeds, dry red chilli and curry leaves into it, saute it for a minute.
  • Then add the mixture of curd and gram flour in the same pan. Give it a boil and then add fried badi or pakoras into the kadhi and then switch off the flame and serve it.
