Ingredients
Serves 10
2 medium sized boiled potatoes(peeled and grated)
1 tsp ginger garlic paste
1/4 Cup paneer grated
1 medium chopped onion
2 green chilli chopped
1/2 cup grated carrot
1/2 cup grated cabbage
1/4 Cup fresh coriander leaves
2tbsp finally chopped dry fruits(cashews+almonds)
1/2 cup Gram flour
2tbsp corn flour
1/2 tsp salt
2tbsp oil for brushing the kababs
1/4 tsp black pepper powder
1/4 tsp turmeric powder
1 tsp red chilli powder
1tbsp coriander powder
1 tsp cumin powder
1tbsp lime juice
1/2 tsp chaat masala
1/4 tsp cumin seeds
1/2 tsp asafoetida (hing)
1tbsp oil
Directions
boil, peel and grate the potatoes
great the Paneer carrot and cabbage. chopped onion and green chillies.
Roast the gram flour on low heat for 2 minutes or until it changes colour to light golden brown.
Kabab mixture making:-
On a medium flame heat 1tbsp oil. Add cumin seeds. When it starts crackling add asafoetida.
Now add chopped and grated veggies.. Saute it for 1-2 minutes and add salt to taste.
Cover the pan and let the veggies cook for 2-3 minutes.
Remove the lid and add all spices, mix it and stir fry it for 4-5 minutes. off the flame.
Transfer the cooked veggies into a plate and let it cool down to room temperature.
Now grind it into a coarse paste .
Transfer this mixture into a bowl and add grated veggies, gram flour, corn flour, fresh coriander , lemon juice and dry fruits
Mix it very well and knead it like soft dough mixture.
Shaping the kababs:-
Grease the palm with some oil. Take a ball sized mixture and then evenly sculpt mixture around bamboo or metal skewers to form long sausage shape.
Brush the kababs with oil on alm sides.
On stove top heat the grilling pan. Drizzle some oil . Cook the brushed kababs on medium to low flame.
