Serves 5

  • 1-1.5kg whole chicken

  • 1500ml can of strong beer

  • For marinade : 1 heaped tsp of fennel seeds

  • 1tsp cumin seeds

  • 1tsp smoked paprika

  • 1tsp brown sugar

  • 1tsp red chilli powder

  • 2tsp black pepper powder

  • 1tsp sea salt

  • 2tbsp olive oil

    Preheat the oven at 200℃

    Bring the chicken to room temperature

  • 03

    In a mortar and pestle put up all the listed ingredients for marinade except oil and bash them up well.

    Now add oil to this and form a paste

  • 05

    Rub this paste all over the chicken, inside out.

    Make sure you cover all the nook and crannies

    Crack open the can and pour it in another can till it is just half full

  • 08

    Then lower the cavity of the chicken on top of the beer can and press it tight so that it just looks as if the chicken is sitting on the can

    Carefully sit the chicken on the very bottom of the oven

  • 10

    Cook for 1 hour 10 minutes to 30 minutes or until the flesh pulls away from bone

    All ovens have different temperature so you might have to just keep a little longer

  • 12

    Once done carefully remove the can and cover the chicken
