1 lb. raw chicken breast cubed 2 c. red potatoes cubed 2 small zucchini cubed 1 yellow pepper cubed 1 small eggplant cubed 1/2 c. pitted kalamata olives For dressing: 1/2 c. olive oil 2 Tbsp. lemon juice 1 Tbsp. oregano 1 Tbsp. minced dried onion 1 tsp. garlic 1 tsp. kosher salt 1/4 c. crumbled feta cheese 1 cup orzo pasta -prepared
Directions
Preheat oven to 400 degrees. Line a large rimmed baking sheet with foil. Arrange chicken and veggies on baking sheet. Boil the orzo pasta, drain, then set aside. Combine ingredients for dressing and whisk well; pour over chicken and veggies on baking sheet. Bake for 20-25 minutes or until potatoes are tender. Remove from oven and mix with prepared orzo pasta in a big bowl add olive oil if needed and sprinkle with feta cheese before serving (cheese is optional)
