Ingredients

Serves 4

  • pancakes: nachni or Ragi flour 1 cups

  • dry roasted oats 1 cups

  • bajri flour 1/2 cups

  • wheat flour 1/4 cups

  • semolina 1 tbsp

  • sour curd/buttermilk as required 2 tbsp

  • chopped green chillies 1 tsp

  • Grated or Finely Chopped Ginger 1 tsp

  • Chopped Mint Leaves 1 tbsp

  • Chopped Coriander Leaves 1 tbsp

  • chopped onion 1 cups

  • chopped carrots 1 cups

  • Chopped Broccoli Stems 1 cups

  • Red Chili Powder 1 tsp

  • turmeric powder 1/2 tsp

  • Garam Masala 1/2 tsp

  • Salt(as per taste) 1 1/2 tsp

  • Oil 2-3 tbsp

  • For stir fry broccoli:broccoli florets 1 cups

  • de seeded diced tomatoes 1/2 cups

  • olive oil 1 tbsp

  • salt and black peper(as per taste) 1 tsp

Directions

    Pancakes: mix together all the dry ingredients.

    Now add all the spices and veggies

  • 03

    Add sour curd or buttermilk

  • 04

    Mix thoroughly avoiding lumps.

    Medium consistency is required

    Now heat a non stick pan , spread very little oil and spread around 1 tbsp of the batter evenly

  • 07

    Let it cook on medium flame from one side followed by the other side

  • 08

    Repeat with the remaining batter

    Stir fry Broccoli : Heat oil in a pan add the parboiled broccoli florets and tomato dices

  • 10

    Cook for a minute and switch off the gas

  • 11

    Add salt and black pepper as per taste

  • 12

    In a serving plate arrange the pancakes place a spoonful of broccoli stir fry on top

  • 13

    Grate some paneer on top
