Serves 4

  • potato 4 nos

  • tomato 2 nos

  • Coriander Leaves Chopped 2 tbsp

  • Dry red Chili 4 nos

  • Kadhi Patta 5-6 nos

  • Mustard Seeds 1 tbsp

  • Cumin Seeds 1 tbsp

  • Asafoetida 1/2 tbsp

  • Coriander Powder 1 tbsp

  • Red Chili Powder 1 tbsp

  • Dry Mango Powder 1 tbsp

  • turmeric powder 1/2 tbsp

  • Grated Ginger 1 tbsp

  • Salt as per taste 1 tsp

  • Cooking Oil 2 tbsp

    Wash, peel and cut the potatoes into cubes and marinate it by adding 1/2tbsp turmeric and red chilli powder, salt and grated ginger and mix it well and rest it for 15 minutes.

    Chopped the tomatoes and coriander leaves.

    After 15 minutes, Heat oil in a pan, fry the marinated potatoes till half cook.Take it out.

    Add some more oil in the same pan, heat it, add asafoetida, cumin seeds, mustard seeds, dry red chilli and kadhi patta into it. Saute it and then add chopped tomatoes and coriander leaves into it.

    Cook it till tomatoes become little soft and then add red chilli powder, turmeric powder, coriander powder, dry mango powder and salt into it, cook all on low-medium flame.

    Then add fried and half cooked potatoes into it. Cook it on low flame for 5-10 minutes by covering it with a lid until the potatoes cooked well and then switch off the flame and serve it.
