PINEAPPLE PASTRY using pressure cooker

Ingredients

Serves : 4
  • maida/all purpose flour 2cups


  • sugar powdered 1 1/2cups


  • sugar 1cup


  • baking powder 1 1/2tspn


  • baking soda 1/2tspn


  • salt 1/4tspn


  • oil 1/2cup


  • pineapple extract 2tspn


  • eggs 3


  • butter 2cubes


  • whipping cream pack 1


  • milk chilled 100ml


  • pineapple 🍍 1


  • stone salt /crystal salt 3cups

Directions

  • Maida(2cups)+sugar powdered (1.5cup)+baking powder+baking soda +salt (1/4tspn)+oil(1/2)cup+pineapple extract 1tspn +eggs (3)=whisk it
  • Take a bowl which fits well into the pressure cooker you use,spread butter and pour the batter and tap slightly to get rid of air bubbles.
  • Take the pressure cooker and remove the gasket and whistle (weight),use only the bottom and the lid.
  • Preheat it for 10 mins and Put 3cups of stone salt or as required at the bottom of the pressure cooker and place a plate like stand above the salt and then place the cake batter and bake for 20 mins in high flame &20mins in low flame.
  • Check the cake using a stick whether it’s cooked or not .if the stick comes without sticky then it’s done and then allow it to cool.
  • Meanwhile prepare whipping cream: sugar(1/2cup)+milk(chilled)100ml+whipping cream =whisk it or blend it and refrigerate for 20mins and again whisk it until you get thick cream when you turn the bowl upside down it should not fall.
  • If you are using hand blender then it makes whipping cream in 3mins.
  • Prepare sugar syrup by adding water (150ml)+sugar(2tspn)=boil it for 5mins +pineapple extract(1tspn) =mix it.
  • Cut the baked cake into 3 layers.
  • Apply prepared sugar syrup on each layer and then whipping cream and repeat for the remaining layers and then apply the remaining whipping cream all over the cake and decorate it as you want.
  • Pineapple cut and blended +sugar(2tspn)=boil it for 10mins and cool it and decorate it.
  • Freeze for 15mins and then cut into slices and enjoy it
