This colourful macaroni pasta salad is very easy to make and is full of crunch, antioxidants and flavours.

Ingredients

Serves : 8
  • 1 cups macaroni pasta


  • 1 nos medium spring onion


  • 1/2 nos roasted red bell peppers


  • 1/2 nos parsley bunch


  • 1/2 nos yellow bell pepper


  • 1/2 nos green capsicum


  • 1 nos carrot,medium


  • 1/2 cups corn kernels boiled


  • 1 tsp olive oil


  • 1 tsp white vinegar


  • 1 tsp dried oregano


  • 1/2 tsp garlic powder


  • 1/2 tsp mustard sauce


  • 1 tsp fine sugar


  • 1/2 tsp salt or to taste


  • 1/2 tsp freshly cracked black pepper to taste

Directions

  • Bring a large pot of lightly salted water to a boil. Add the pasta and boil for 5-7 minutes or until aľ dante.
  • Drain in a colander.
  • In the meantime wash the vegetables and then cut into bite sized pieces (keep some red pepper thinly sliced; parsley removed from stems and chopped).
  • In a small bowl whisk together the olive oil, vinegar, mustard sauce, oregano, garlic powder, salt, and pepper.
  • Combine the cooked pasta, chopped vegetables, corn kernels and vinegar mixture.
  • Stir lightly until everything is well mixed and coated.
  • Serve immediately or refrigerate as per the liking.
  • My tip - This yummy and healthy salad can be prepared with any vegetables in hand or as per choice.
