  • 250 gms wheat penne pasta

  • 1/2 tsp olive oil

  • 1 tsp salt or to taste

  • 1 tsp garlic finely chopped

  • 1 nos small capsicum chopped

  • 2 nos baby corn

  • 1 nos orange bell pepper cut into strips and sauteed in butter and salt and pepper

  • 1/2 cups chopped carrot

  • 1/2 tsp pepper powder or to taste

  • 1 tsp oregano

  • 2 tbsp eggless mayonnaise

  • 2 tbsp cream

  • 2 tsp grated cheese

  • 1 tbsp tomato ketchup


  • In a wide pan,boil water, add salt and oil. Then slowly add the pasta and cook till the pasta is al dente.( it should be soft but firm)
  • Stir in between to prevent the pasta from sticking together.
  • After it is cooked, drain it in a colander and pour cold water on it.
  • Heat oil in a pan, sauté garlic for a few seconds, then add capsicum, carrots and cook uncovered till done.
  • Do not overcook the vegetables should retain the crunchiness.
  • Add mayonnaise, cream, tomato ketchup, cheese, oregano, salt and pepper powder.
  • Now mix the pasta in veggie-sauce mixture and sprinkle some oregano, if it is too thick , you can add little milk.
  • Now do the plating according to your choice sprinkle oregano and serve hot.
