Description

Traditionally, pasta aglio e olio is served with spaghetti noodles, but I substituted spaghetti for one of my favorites, penne pasta and elbow pasta.  It is a quick and simple pasta side dish yet flavourful and delicious

Ingredients

Serves : 4
  • 2 cups wheat penne pasta


  • 1 cups elbow pasta


  • 1/2 cups extra virgin olive oil


  • 2 tbsp minced garlic


  • 2 tbsp corn kernels (optional)


  • 1/2 tbsp freshly pounded black pepper


  • 1 tsp salt or to taste


  • 1 tbsp diced fresh parsley


  • 1 tsp lemon zest(optional)

Directions

  • Boil the penne pasta and elbow pasta as per the instructions on the box.
  • Strain and refresh with cold water and keep aside.
  • Meanwhile heat the olive oil in a large skillet and add the garlic and sauté for 2 minutes.
  • Stir frequently and add the crushed black pepper. Sauté and add a cup of water and bring to a boil.
  • Simmer for 5 minutes, then add the cooked pasta and corn kernels.
  • Toss and add in the salt and parsley.
  • Its ready to serve.
  • Serve after 5 minutes for best results.
  • Garnish with fresh lemon zest as per the choice.
