Creamy Veg Penne Pasta

Description

Wheat Penne pasta is creamy and luscious with crunchiness and goodness of vegetables and cheese. It is the healthier version as I haven't used all purpose flour.  Kids just love it

Ingredients

Serves : 4
  • 250 gms penne pasta (wheat pasta)


  • 1 1/2 tbsp olive oil


  • 1/2 tsp salt or to taste


  • 1 tbsp garlic finely chopped


  • 1 nos medium capsicum chopped


  • 1/2 nos broccoli florets ( blanched)


  • 1/3 cups sweet corn


  • 1/2 cups chopped carrot


  • 1/2 tsp pepper powder or to taste


  • 1/2 tsp salt or as required


  • 1 tsp oregano


  • 2 tbsp eggless mayonnaise


  • 2 tsp grated cheese


  • 1 tsp tomato ketchup (optional)


  • 2 tbsp milk

Directions

  • In a wide pan, boil water, add salt and 1/2 teaspoon oil, subsequently add the pasta and cook till the pasta is al dante .( it should be soft but firm).
  • Stir in between to prevent the pasta from sticking together.
  • Drain it in a colander and pour cold water to refresh, add another 1/2 teaspoon oil to it and keep it aside.
  • Heat olive oil in a pan, sauté garlic for a few seconds, then add capsicum, carrot, corn and broccoli and cook uncovered till done. (Do not overcook The vegetables should retain its crunchiness).
  • Add mayonnaise, cheese, oregano, salt and pepper powder, mix in the boiled pasta in the prepared sauce mixture and sprinkle some oregano.
  • Check the consistency, if it is too thick , you can add little cream or milk.
  • Now sprinkle oregano and serve hot with garlic bread
