Description
Wheat Penne pasta is creamy and luscious with crunchiness and goodness of vegetables and cheese. It is the healthier version as I haven't used all purpose flour. Kids just love it

Ingredients
Serves 4
Penne Pasta (wheat pasta) 250 gms
olive oil 1 1/2 tbsp
Salt or to taste 1/2 tsp
Garlic finely chopped 1 tbsp
medium capsicum chopped 1 nos
broccoli florets ( blanched) 1/2 nos
sweet corn 1/3 cups
chopped carrot 1/2 cups
Pepper powder or to taste 1/2 tsp
Salt or as required 1/2 tsp
Oregano 1 tsp
eggless mayonnaise 2 tbsp
grated cheese 2 tsp
tomato ketchup (optional) 1 tsp
milk 2 tbsp
Directions
In a wide pan, boil water, add salt and 1/2 teaspoon oil, subsequently add the pasta and cook till the pasta is al dante .( it should be soft but firm).
Stir in between to prevent the pasta from sticking together.
Drain it in a colander and pour cold water to refresh, add another 1/2 teaspoon oil to it and keep it aside.
Heat olive oil in a pan, sauté garlic for a few seconds, then add capsicum, carrot, corn and broccoli and cook uncovered till done. (Do not overcook The vegetables should retain its crunchiness).
Add mayonnaise, cheese, oregano, salt and pepper powder, mix in the boiled pasta in the prepared sauce mixture and sprinkle some oregano.
Check the consistency, if it is too thick , you can add little cream or milk.
Now sprinkle oregano and serve hot with garlic bread
