Ingredients

  • 1 nos chicken breast


  • 1/4 tsp salt


  • 1/4 tsp turmeric


  • 1/2 tsp chilly powder


  • 1 tsp butter


  • 1 tsp chopped shallots


  • 1 tsp chopped garlic


  • 1/2 tsp bread crumbs


  • 2 tsp chopped mushroom


  • 1/4 tsp chopped jalepeno


  • 1 nos carrots


  • 1 tbsp orange juice


  • 2 tbsp oil


  • 1/4 tsp sugar


  • 1/4 tsp salt


  • 500 gms chicken neck and bones


  • 1 cups grated coconut


  • 1 tsp sliced shallots


  • 1 tsp sliced garlic


  • 1 tsp pepper


  • 1/2 tsp garam masala powder


  • 1/2 tsp chilly powder


  • 1/2 tsp coriander powder


  • 1 tsp coconut oil


  • 2 sprig curry leaves


  • 1/2 cups rice flour


  • 1/4 tsp salt


  • 1/2 cups boiling water


  • 1 tsp shallots crushed


  • 1/2 tsp crushed cumin

Directions

  • Mix rice flour with salt, shallots and cumin. Add boiling water to rice flour and knead well with a spoon. Allow it to cool a bit and knead with wet hand. Make into small balls , press it with fork. Steam it for 10 minutes and keep aside. Cook carrot with orange juice, salt and sugar. Mash it and keep aside. Roast coconut with coconut oil, shallots , garlic, curry leaves and pepper till brown. Add chilly, coriander and garam masala. Allow it to cool a little and grind it to a fine paste without adding water. Cook chicken bones with this coconut gravy and salt. When bones are cooked for 15 minutes strain the sauce. Keep the sauce again in heat, season it to right consistency. Marinate chicken breast with salt, chilly and pepper. Heat butter and sauté shallots,garlic till brown. Add mushroom, salt and cook for 5 minutes. Remove pan from fire, add jalepeno and bread crumbs to it. Flatten chicken breast with a hammer. Stuff chicken breast with fillings. Roll it and tie wit a thread. Heat oil in a pan, cook stuffed chicken breast in it for 15 minutes in medium heat. Cut chicken breast into 4 pieces. Serve it with coconut sauce, carrot mash and rice dumplings.
