First slit the brinjal from upside and soak it in turmeric water for 5 minutes. Grind ginger-garlic in a mixer-grinder and make a paste of it.
Then take a pan, add cumin and coriander seeds,black pepper, cloves and green cardamom and roast the masalas well on low-medium flame. Cool it and then coarsely grind it.
Heat oil in pan, add sliced onion into it, as the onions become little brown then add ginger-garlic paste into it, cook it and then add turmeric powder, red chilli powder, 1/2tbsp of garam masala powder and salt into it. Saute all the masalas on low flame for 2 min and then add brinjal and 2 cup water into it.
Cook it for 5-8 minutes by covering with a lid till the brinjal cooked nicely.
Then add the roasted masala and 1/2 tbsp more of garam masala powder into it, mix it well. Cook for few seconds and then add chopped coriander leaves into it and then serve it.
