Ingredients

Serves : 6
  • 2 cups shredded cabbage


  • 1 nos medium carrots chopped in strips


  • 1/3 cups peas


  • 1 nos medium capsicum and bell pepper chopped


  • 1 nos medium thinly sliced onion


  • 3-4 nos green chillies(adjust)


  • 2 nos tomatoes


  • 2-4 tbsp cashews


  • 1-2 nos for dry spices: bay leaf


  • 2-3 nos cloves


  • 1 inch cinnamon stick


  • 3-4 nos cardamom pods


  • 1 nos javitri


  • 1 tsp spice powders:cumin powder


  • 1 tbsp red chili powder(adjust)


  • 1 tsp kitchen king masala


  • 1 tsp coriander powder


  • 1/4 tsp turmeric


  • 1/2 tsp peper


  • 1 tsp crushed kasuri methi


  • 1 tbsp ginger garlic paste


  • 2 tbsp cream


  • 1 tsp salt or as per taste


  • 3 tbsp oil


  • 3 tbsp chopped ccoriander leaves

Directions

  • Soak cashews in hot water for 30 minutes. drain excess water
  • Boil tomatoes until its skin starts to peel. Allow to cool . Peel the skin. Grind tomatoes and cashews to smooth paste
  • Heat oil in a pan, add dry spices and roast until aromatic
  • Add ginger garlic paste with onions. Saute until onions are tender
  • Add green chillies with spice powders and mix well
  • Add ground paste and saute until oil starts leaving sides
  • Add chopped veggies with 1.5 cups veg stock or water. add salt,Cover and cook ,keep stirring occasionally
  • If its too dry, add additional water or stock. The gravy should be thick and not runny
  • Add kasuri methi, cream and mix well. Cook for a minute. Garnish with coriander leaves and serve hot
