Soak cashews in hot water for 30 minutes. drain excess water
Boil tomatoes until its skin starts to peel. Allow to cool . Peel the skin. Grind tomatoes and cashews to smooth paste
Heat oil in a pan, add dry spices and roast until aromatic
Add ginger garlic paste with onions. Saute until onions are tender
Add green chillies with spice powders and mix well
Add ground paste and saute until oil starts leaving sides
Add chopped veggies with 1.5 cups veg stock or water. add salt,Cover and cook ,keep stirring occasionally
If its too dry, add additional water or stock. The gravy should be thick and not runny
Add kasuri methi, cream and mix well. Cook for a minute. Garnish with coriander leaves and serve hot
